Gluten-Free, Gingerbread MUG Cake!

Before I started a gluten-free diet, pfeffernusse and lebkuchen were some of my favorite sweets from Germany. But then again, who doesn’t love German gingerbread desserts? That’s why I’ve created a simple, gluten-free recipe for a gingerbread mug cake. Yum . . .

Traditional gingerbread has been around for centuries, but with so many new dietary changes, new variations are bound to popup. This recipe keeps it simple by only using a strong ginger and cinnamon. But you can give it extra zing by adding a dash of cardamom, nutmeg, clove, anise or black pepper.

I’ve said it before: who doesn’t like mug cakes? Nothing tastes better than made-to-order mini-cake. I bake these quick, easy desserts when I want to treat myself with a fresh-from-the-oven sweet.
